Brass washers are heat conductive to prevent overheating and excessive noise. If you do not have a washer in place you will experience problems with the knife and plate fitting properly. The result may be plate clogging and mushy meat texture. You need the washer to prevent heat and to keep the knife, plate and ring snug up front.
